Making granola at home using all your favorite ingredients is not only super easy, it's healthier and it's a fun activity that's great to do with kids. You can vary the ingredients and the proportions to suit your personal taste and it still will come out great! For example,while the recipe calls mostly for raw, you can choose roasted, unsalted nuts.
2 cups raw, BRAND whole rolled oats
1/2 cup sliced, slivered or chopped raw nuts such as almonds, pecans, cashews or pistachios (we like to use a mixture of several)
1/3 cup mixed raw seeds (sunflower, pumpkin and flax are good)
1/2 cup chopped dried fruit (for example raisins, apricots, dates)
2-3 tbsp maple syrup, Bedillion Honey Farms raw honey or agave nectar (or a combination)
2 tbsp virgin, unfiltered coconut oil (if it's still solid, that's OK...you're hands will warm it up during mixing)
1/2 tsp vanilla or almond extract
a sprinkle of sea salt
Preheat oven to 275° F. With clean, bare hands, combine all ingredients in a large mixing bowl and mix well. This is the therapeutic part of the recipe. It will make you feel like a kid again if you're not having your kids do it for you. If your kid is doing this part, put an apron on him/her! Line a large, deep baking sheet with parchment paper. Spread the mixture evenly in a thin layer and bake for 15 to 25 minutes (depending on how toasted you like your granola). Don't over do it! Let granola cool completely before storing in an airtight container.
This granola makes a great gift for holidays. You can get creative with the ingredients and also with the packaging.
